Wild Rice Soup

Total Time: 14 hrs Preparation Time: 13 hrs Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 3 bell peppers, chopped (one red, one green, one yellow)
  • 1 tablespoon red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 leeks, chopped
  • 2 celery ribs, finely chopped
  • 2 carrots, finely chopped
  • 2 cups wild rice, cooked
  • 6 cups chicken broth
  • 2 cups beans, cooked
  • 2 tablespoons fresh oregano, finely chopped
  • 2 tablespoons fresh thyme, finely chopped

Recipe

  • 1 combine the peppers, 1/2 tablespoons olive oil and vinegar and toss lightly.
  • 2 place this mixture in the refrigerator and allow it to marinate for 10-12 hours.
  • 3 the following day, heat the remaining olive oil in a pan over medium heat.
  • 4 saute' the leek, carrots and celery in the olive oil for about 3-4 minutes.
  • 5 stir in the pepper mixture.
  • 6 once this has heated through, place it in your stock pot and add the wild rice, beans, chicken broth and reduce the heat to simmer this mixture, uncovered, for about 25 minutes, stirring occasionally.
  • 7 add the oregano and thume and cook for about five more minutes.
  • 8 serve hot.

Toasted Orzo With Pine Nuts

Total Time: 22 mins Preparation Time: 10 mins Cook Time: 12 mins

Ingredients

  • Servings: 4
  • 5 tablespoons butter, divided
  • 1 1/4 cups orzo pasta
  • 3 cups chicken broth
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1/2 cup pine nuts, toasted
  • 1/4 cup fresh parsley
  • salt and pepper, to taste

Recipe

  • 1 brown orzo in 3 tablespoons butter, stirring often until pasta is toasted and golden, about 5 minutes.
  • 2 add chicken broth to orzo and cook until pasta is tender. you could drain pasta, but i like to cook it down a little more and leave it creamy.
  • 3 while pasta is cooking, saute onions and garlic cloves until onions are soft and translucent.
  • 4 add onions and garlic, toasted pine nuts, and fresh parsley to orzo. season with salt and pepper to taste.
  • 5 you could serve straight away, or you could leave it in a warm oven until the rest of your meal is ready!

Tuna Casserole

Ingredients

  • Servings: 10
  • 1 (16 ounce) bag egg noodles
  • 2 (6 ounce) cans tuna
  • 1 (10 1/2 ounce) can cream of mushroom soup
  • 1 (10 1/2 ounce) can cream of celery soup
  • 1/2 cup celery, chopped finely
  • 1/2 cup onion, chopped finely
  • 1/2 cup pimento stuffed olive, sliced
  • 1 (4 ounce) can diced green chilies
  • 2 cups medium cheddar, grated
  • 3/4 cup mayonnaise
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • salt and pepper, to taste

Recipe

  • 1 cook egg noodles according to directions on pkg.
  • 2 assemble rest of ingredients in large bowl.
  • 3 add noodles.
  • 4 put in 13 x 9 pan.
  • 5 bake @350°f for 60 minutes.

Spaghetti & Meatballs Soup W/mini Grilled Cheese

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil, divided
  • 1 minced garlic clove
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 1 onion, chopped
  • 1 (15 ounce) can low-sodium diced tomatoes
  • 2 cups low sodium chicken broth
  • 6 ounces ground turkey breast
  • 1/4 cup breadcrumbs
  • 1 1/2 teaspoons dried basil
  • 1 small egg, beaten
  • 1/3 cup grated parmesan cheese, divided
  • 2 ounces whole wheat spaghetti, broken
  • 4 slices part-skim mozzarella cheese
  • 8 slices baguette
  • 4 teaspoons unsalted butter

Recipe

  • 1 for soup:heat 1/2 tablespoon oil in a large pot on medium high heat. put in the garlic, carrots, celery, and onion. cook, stirring occasionally, until the vegetables are soft, about 5 minutes. add tomatoes and broth. bring to a boil. then reduce heat and simmer for about 15 minutes.
  • 2 meanwhile, make the meatballs: in a small bowl, combine turkey, bread crumbs, basil, egg, and 1/4 cup cheese. roll into mini balls using 1 tsp meat mixture. in a pan on medium high heat, brown meatballs in remaining oil until golden on all sides, about 10 minutes.
  • 3 add spaghetti and meatballs to broth. simmer 10 minutes, until pasta is tender. divide into 4 portions and top with remaining parmesan.
  • 4 for grilled cheese:heat a skillet on medium. sandwich cheese in between bread slices. lightly butter both sides of each sandwich.
  • 5 cook in a skillet until golden brown on each side, and the cheese has melted, 3 to 4 minutes per side.

Wild Rice Stuffing

Ingredients

  • Servings: 8
  • 2 (13 3/4 ounce) cans chicken broth or 2 (13 3/4 ounce) cans vegetable broth, for vegan version
  • 2/3 cup wild rice, uncooked
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme or 2 teaspoons fresh thyme leaves
  • 1 1/2 cups water
  • 2 tablespoons vegetable oil, divided
  • 4 medium carrots, sliced
  • 2 medium celery ribs, sliced
  • 1 medium onion, chopped
  • 10 ounces mushrooms, sliced
  • 1 1/2 cups long-grain rice
  • 1/4 cup chopped fresh parsley

Recipe

  • 1 in 4-quart saucepan over high heat, heat chicken broth, wild rice, salt, thyme, and 1 1/2 cups water to boiling.
  • 2 reduce heat to low; cover and simmer 35 minutes.
  • 3 meanwhile, in nonstick skillet over medium-high heat, heat 1 tablespoon vegetable oil.
  • 4 add carrots, celery, and onion and cook until tender-crisp, stirring occasionally.
  • 5 remove carrot mixture to bowl.
  • 6 in same skillet, add 1 tablespoon vegetable oil, cook mushrooms until golden brown and all liquid evaporates.
  • 7 stir long-grain rice, carrot mixture, and mushrooms into wild rice; heat to boiling over high heat.
  • 8 reduce heat to low; cover and simmer 20 minutes longer or until all liquid is absorbed and rice is tender.
  • 9 for vegan or vegetarian use the vegetable broth.
  • 10 stir in chopped parsley.
  • 11 use to stuff 12 to 16 pound turkey or serve on the side.

Tex-mex Tabbouli

Total Time: 35 mins Preparation Time: 30 mins Cook Time: 5 mins

Ingredients

  • Servings: 6
  • 3/4 cup uncooked bulgur
  • 2 cups boiling water
  • 1/2 cup chopped fresh parsley or 1/2 cup fresh cilantro
  • 1/2 cup chopped green pepper
  • 2 medium tomatoes, chopped
  • 1 small jalapeno pepper, seeded & chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped black olives (optional)
  • 1 teaspoon chopped garlic
  • 3 tablespoons lime juice
  • 1 tablespoon olive oil

Recipe

  • 1 pour boiling water over bulghur.
  • 2 let stand 30 minutes.
  • 3 squeeze out excess water until bulghur is just moist.
  • 4 add all remaining ingredients.
  • 5 mix well.
  • 6 refrigerate 2 hours.
  • 7 serve with torn strips of pita bread or with taco chips.

Tuna Casserole

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 (14 1/2 ounce) box kraft macaroni and cheese
  • 1 (15 ounce) can peas (drained)
  • 1 (10 3/4 ounce) can cream of celery soup or 1 (10 3/4 ounce) can cream of mushroom soup
  • 12 ounces tuna in water (drained)
  • 1 cup plain breadcrumbs

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 cook macaroni noodles until done. drain and return back to pot. add cheese packets as directed on the box. stir in drained tuna, and cream of celery or cream of mushroom soup and can of drained peas. stir well. place mixture in a casserole dish and sprinkle bread crumbs on top.
  • 3 bake for 30 minutes until brown and bubbly.
