Walnut Rice Florentine

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 (14 ounce) can beef broth
  • 3 tablespoons unsalted butter
  • 1 cup onion, chopped
  • 1 garlic clove, minced
  • 1 cup converted rice
  • 2 tablespoons dry cooking sherry
  • 3 cups fresh spinach, shredded
  • 1/4 cup heavy cream
  • 1/2 cup walnuts, toasted and chopped
  • 1/4 cup parmesan cheese, grated
  • black pepper

Recipe

  • 1 add water to broth to make 2 1/4 cups, set aside.
  • 2 melt butter in large sauce pan then add rice,onion and garlic.
  • 3 cook over medium heat stirring constantly, 3-4 minutes.
  • 4 add sherry and broth and bring to a boil.
  • 5 reduce the heat , cover and simmer 20 minutes.
  • 6 remove from heat and stir in the spinach and heavy cream.
  • 7 let stand until liquid is absorbed.
  • 8 stir in walnuts and sprinkle with parmesan cheese and pepper to taste.
