Wilder Than Wild Rice

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 3/4 cup chopped onion
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 1/2 cups rice
  • 1/2 cup wild rice
  • 1 (16 ounce) can black beans, drained
  • 2 1/2 cups water

Recipe

  • 1 saute onion, green pepper, red pepper, and garlic in olive oil in saucepan until vegetables are tender.
  • 2 stir in rice and wild rice.
  • 3 saute for 1 minute.
  • 4 add black beans and water: mix well.
  • 5 cook over low heat for 40 minutes, stirring occasionally.
  • 6 spoon into baking pan.
  • 7 grill over hot coals for 5 minutes to add smoky flavor.
