- 2 packages fresh cheese tortellini
- 1 package fresh pesto sauce
- 1/2 cup wine tarragon vinegar
- 1 lb asparagus, sliced and blanched
- 2 cups julienned red peppers
- 2 cups julienned yellow peppers
- 1 cup walnuts
Recipe
- 1 cook tortellini according to directions, drain, rinse with cold water.
- 2 combine pesto and vinegar.
- 3 add other ingredients, mix everything well.
- 4 chill to taste.
