Trail Mix Energy Bars

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 1/4 cup whole wheat flour
  • 1/4 cup wheat bran
  • 1/4 cup oats
  • 1/4 cup artificial sweetener
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 1 egg (or equivalent)
  • 1/2 cup soymilk
  • 2 tablespoons margarine
  • 2 tablespoons honey
  • 12 ounces trail mix

Recipe

  • 1 preheat oven to 425 degrees.
  • 2 place all dry ingredients in a medium mixing bowl and mix well.
  • 3 whisk egg equivalent and milk until well blended.
  • 4 melt margarine and honey together.
  • 5 make a well in the dry ingredients; add egg/milk and honey/margarine mixtures. stir until well blended.
  • 6 add entire bag of trail mix and stir until evenly coated.
  • 7 pour mixture into lightly greased 8x8 square pan and spread evenly.
  • 8 bake at 425 degrees for 15-20 minutes until golden brown and toothpick inserted in center comes out clean.
