Wheat Roll Mix

Total Time: 2 hrs 10 mins Preparation Time: 2 hrs Cook Time: 10 mins

Ingredients

  • all-purpose flour, 17 pounds
  • whole wheat flour, 8 pounds
  • sugar, 3 cups
  • salt, 1/4 cup
  • dry milk, 3 cups
  • yeast, 1 1/4 cup
  • vegetable oil, 2 1/4 cup
  • warm water, 1 3/4 gallons

Recipe

  • 1 pour all dry ingredients into flour mixer with a dough hook and mix well.
  • 2 gradually add water and oil and mix until dough is smooth, about 10-15 minute.
  • 3 leave to rise in a warm place for 30 minute.
  • 4 get trays with lips on them and grease as many as needed to fit 450 clementine sized rolls.
  • 5 tear off small pieses of the dough and rub them between your index finger and thumb so the dough is stretched and smooth. shape the rolls - they should be just smaller then a clementine and bigger than a golf ball - and place snugly on the trays.
  • 6 put trays in a warm spot untill the rolls doubled in size.
  • 7 bake in 350 degrees f oven until deep brown on top, be sure to rotate trays if oven heat is uneven.
