Tuna Couscous Salad

Ingredients

- 1/2 cup uncooked couscous
- 1/4 cup red wine vinegar
- 2 tablespoons olive oil
- 1 tablespoon dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon sugar
- 1/8 teaspoon garlic powder
- 1 medium green bell pepper, chopped
- 1 large cucumber, peeled, seeded and chopped
- 1 small sweet onion, chopped
- 1/2 cup raisins
- 6 ounces canned tuna, drained
- 1 (11 ounce) can extra-sweet whole kernel corn, drained
Recipe
- 1 bring 1/2 cup water to a boil in a medium pan: stir in couscous.
- 2 remove pan from the heat; cover and let stand 5 minutes.
- 3 fluff the couscous with a fork and set aside.
- 4 in medium bowl combine vinegar, olive oil, mustard, salt pepper, sugar and garlic powder and stir to blend.
- 5 add the couscous, bell pepper, cucumber, onion, raisins, tuna, and corn and toss to coat.
- 6 cover and chill for at least 1 hour to let the flavors blend.
