Tuna Couscous Salad

Ingredients

  • Servings: 4
  • 1/2 cup uncooked couscous
  • 1/4 cup red wine vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon sugar
  • 1/8 teaspoon garlic powder
  • 1 medium green bell pepper, chopped
  • 1 large cucumber, peeled, seeded and chopped
  • 1 small sweet onion, chopped
  • 1/2 cup raisins
  • 6 ounces canned tuna, drained
  • 1 (11 ounce) can extra-sweet whole kernel corn, drained

Recipe

  • 1 bring 1/2 cup water to a boil in a medium pan: stir in couscous.
  • 2 remove pan from the heat; cover and let stand 5 minutes.
  • 3 fluff the couscous with a fork and set aside.
  • 4 in medium bowl combine vinegar, olive oil, mustard, salt pepper, sugar and garlic powder and stir to blend.
  • 5 add the couscous, bell pepper, cucumber, onion, raisins, tuna, and corn and toss to coat.
  • 6 cover and chill for at least 1 hour to let the flavors blend.
