Tuna Curry On Rice

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 tablespoons butter or 4 tablespoons margarine
  • 1/2 cup chopped onion
  • 1 tablespoon all-purpose flour
  • 3/4 cup water
  • 1 -2 tablespoon curry powder, to taste
  • 1/4 cup half-and-half
  • 2 (6 1/2 ounce) cans tuna, well drained
  • 3 cups cooked rice
  • 1 tablespoon chopped parsley
  • salt, to taste
  • pepper, to taste
  • cumin, to taste
  • garlic powder, to taste
  • chutney
  • peanuts
  • coconut

Recipe

  • 1 melt butter in saucepan; add onion.
  • 2 saute until golden.
  • 3 stir in flour.
  • 4 cook until bubbly.
  • 5 gradually add water, cooking and stirring until smooth.
  • 6 blend in curry powder, seasonings and half-and-half.
  • 7 cook, stirring, for 1 minute.
  • 8 gently add tuna and simmer 5 minutes longer.
  • 9 spoon over hot cooked rice and sprinkle with parsley.
  • 10 serve with small bowls of the above condiments.
