Wild Rice Salad

Total Time: 22 mins Preparation Time: 12 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 100 g wild rice
  • 1/3 cup long-grain rice
  • 2 green shallots, sliced
  • 1 red capsicum, chopped
  • 1/4 cup oil
  • 2 teaspoons lemon juice
  • 1 teaspoon sugar

Recipe

  • 1 cook the wild rice according to the packet instructions.
  • 2 add rice to a pan of boiling water, boil rapidly, uncovered, for 10 minutes or until just tender, drain.
  • 3 combine both rices with shallots and red capsicum.
  • 4 toss well with dressing.
  • 5 refrigerate, covered, overnight before serving.
  • 6 dressing:.
  • 7 combine oil, juice, and sugar in a screw top jar, and shake well.
