Tortellini Soup

Ingredients

- 3 tablespoons olive oil
- 1/2 cup onion, minced
- 1/2 cup celery, minced
- 1 (32 ounce) box chicken broth
- 1 (9 ounce) package refrigerated tortellini
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 1 (15 ounce) can diced tomatoes, drained
- 1/2 tablespoon dried basil
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 saute onions and celery in olive oil until clear.
- 2 add chicken broth and bring to boil.
- 3 add tortellini and cook for 8-9 minutes.
- 4 add seasonings, beans and tomatoes and simmer for 5 minutes.
- 5 serve topped with parmesan cheese.
