Wheat Pilaf With Brussels Sprouts And Mushrooms

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 tablespoon butter (unsalted)
  • 1 tablespoon olive oil
  • 1/2 lb sliced mushrooms (shiitake and oyster)
  • 1/2 cup finely chopped red onion
  • 1 cup bulgur (preferably coarse)
  • 2 cups chicken broth (or vegetable broth, to make this dish vegan)
  • 1/2 lb brussels sprout
  • 1/4 cup packed fresh flat-leaf parsley
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon salt
  • pepper, and khmeli suneli

Recipe

  • 1 sauté onions, mushrooms and quartered brussels sprouts in oil and butter. stir in bulgur, salt and pepper and sauté for a minute or two. add boiling broth, fresh thyme and return to a boil. cover and place in 350f oven for 20-25 minute toss parsley, fluff the bulgur with a fork and check seasoning.
