Wheat Pilaf With Brussels Sprouts And Mushrooms

Ingredients

- 1 tablespoon butter (unsalted)
- 1 tablespoon olive oil
- 1/2 lb sliced mushrooms (shiitake and oyster)
- 1/2 cup finely chopped red onion
- 1 cup bulgur (preferably coarse)
- 2 cups chicken broth (or vegetable broth, to make this dish vegan)
- 1/2 lb brussels sprout
- 1/4 cup packed fresh flat-leaf parsley
- 1 teaspoon fresh thyme
- 1/2 teaspoon salt
- pepper, and khmeli suneli
Recipe
- 1 sauté onions, mushrooms and quartered brussels sprouts in oil and butter. stir in bulgur, salt and pepper and sauté for a minute or two. add boiling broth, fresh thyme and return to a boil. cover and place in 350f oven for 20-25 minute toss parsley, fluff the bulgur with a fork and check seasoning.
