Wild Rice Salad

Total Time: 1 hr 20 mins Preparation Time: 45 mins Cook Time: 35 mins

Ingredients

  • 1 cup wild rice
  • 1 cup low sodium chicken broth
  • 6 ounces turkey
  • 1 1/4 cups broccoli florets
  • 1 carrot
  • 1 1/4 cups red bell peppers
  • 1 small onion
  • 2 ounces walnuts
  • 1/2 cup mushroom
  • 1/2 cup grapeseed oil
  • 3 tablespoons lemon juice
  • 3 tablespoons wine vinegar
  • 1/2 teaspoon dry mustard
  • 1 teaspoon curry powder

Recipe

  • 1 rinse wild rice with hot water. drain.
  • 2 in pan combine chicken broth with two additional cups of water.
  • 3 simmer for 30 to 40 min until all water is absorbed. cool.
  • 4 broccoli : chop small.
  • 5 carrot: slice thin rounds.
  • 6 red bell pepper: cut into strips.
  • 7 onion: dice.
  • 8 walnuts: light chop.
  • 9 mushrooms: large dice.
  • 10 in mixing bowl mix all ingredients except dressing.
  • 11 in small bowl mix dressing ingredients until smooth. pour over salad.
  • 12 mix and refrigerate.
