Wild Rice Salad

Ingredients
- 1 cup wild rice
- 1 cup low sodium chicken broth
- 6 ounces turkey
- 1 1/4 cups broccoli florets
- 1 carrot
- 1 1/4 cups red bell peppers
- 1 small onion
- 2 ounces walnuts
- 1/2 cup mushroom
- 1/2 cup grapeseed oil
- 3 tablespoons lemon juice
- 3 tablespoons wine vinegar
- 1/2 teaspoon dry mustard
- 1 teaspoon curry powder
Recipe
- 1 rinse wild rice with hot water. drain.
- 2 in pan combine chicken broth with two additional cups of water.
- 3 simmer for 30 to 40 min until all water is absorbed. cool.
- 4 broccoli : chop small.
- 5 carrot: slice thin rounds.
- 6 red bell pepper: cut into strips.
- 7 onion: dice.
- 8 walnuts: light chop.
- 9 mushrooms: large dice.
- 10 in mixing bowl mix all ingredients except dressing.
- 11 in small bowl mix dressing ingredients until smooth. pour over salad.
- 12 mix and refrigerate.
