Yellow Coconut Rice

Ingredients

  • Servings: 4
  • 1 3/4 cups long-grain rice
  • 1 1/4 cups water
  • 400 ml coconut cream
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon ground turmeric
  • 1 pinch saffron thread

Recipe

  • 1 soak the rice in a large bowl of cold water for 30 minutes.
  • 2 pour the rice into a strainer and rinse under cold running water to remove all excess starch. rinse until the water runs through the rice clear.
  • 3 place all ingredients into a large heavy based saucepan. cover with the lid and bring to the boil. stir occassionally.
  • 4 reduce the heat to a simmer. keep the saucepan covered and simmer for about 15 minutes, or until the rice is tender.
  • 5 remove from the heat and keep covered. stand for 5 to 10 minutes before serving.
