easy summer gazpacho

Ingredients

  • Servings: 7
  • 1 (24 ounce) jar classico® tomato and basil sauce
  • 24 ounces water
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons granulated sugar
  • hot pepper sauce, to taste
  • 1 tablespoon extra-virgin olive oil
  • 1 medium fresh tomato, chopped
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped yellow bell pepper
  • 1/4 cup diced red onion
  • 1 1/2 cups diced english cucumber
  • 1/4 cup chopped fresh basil
  • salt and freshly ground black pepper, to taste
  • fresh chopped parsley, for garnish (optional)

Recipe

    Preparation Time: 15 mins Ready Time: 3 hrs 15 mins

  • combine tomato and basil sauce, water, lemon juice, sugar, hot sauce, and olive oil in a large bowl. stir in the tomato, red and yellow bell pepper, red onion, and cucumber. add the basil, salt, and pepper.
  • cover and refrigerate 2 to 3 hours to blend flavors.
  • stir before serving. top with fresh chopped parsley.
