Whole Wheat Zucchini Bread

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • 2 lbs zucchini, grated (~ 2 medium)
  • 1 cup sugar (up to 1-1/3)
  • 2 tablespoons sugar (up to 1-1/3)
  • 4 cups whole wheat flour
  • 6 tablespoons ground flax seeds
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 cup plain yogurt
  • 2 tablespoons lemon juice
  • 4 large eggs
  • 1/2 cup walnuts or 1/2 cup pecans, chopped

Recipe

  • 1 grate zucchini.
  • 2 mix zucchini with 4 t sugar.
  • 3 drain in fine mesh strainer over bowl for 30 minutes.
  • 4 whisk together dry ingredients.
  • 5 mix together zucchini, lemon and yogurt separately.
  • 6 beat eggs in kitchenaid.
  • 7 add half of dry mixture to eggs and mix lightly.
  • 8 add 1/3 zucchini mixture.
  • 9 add half of remaining dry mixture.
  • 10 add 1/3 zucchini mixture.
  • 11 add rest of dry mixture
  • 12 add rest of zucchini mixture and nuts.
  • 13 split into 2 9-inch loaf pans that have been sprayed with baking spray.
  • 14 bake in preheated oven at 350 convection for 50 minutes.

Zesty Southwestern Breakfast Wrap

Ingredients

  • Servings: 2
  • 2 tortillas
  • 1 egg
  • 1/2 cup skim milk
  • 1 lb turkey sausage
  • 1 ounce taco seasoning
  • 2 tablespoons garlic powder
  • 15 ounces kidney beans, drained
  • 1 onion, diced
  • 1 tomato, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 1/2 cups shredded low-fat cheddar cheese

Recipe

  • 1 mix eggs and milk in a bowl.
  • 2 spray non-stick spray along bottom of skillet.
  • 3 cook eggs on high until cooked completely and fluffy.
  • 4 mix garlic and sausage together. cook sausage on heated skillet. once sausage is cooked, mix in taco seasoning, eggs, tomato, and cilantro.
  • 5 fill tortillas equallywith filling. roll wraps and serve.

Whole Wheat Spaetzle

Ingredients

  • Servings: 4
  • 4 eggs
  • 1 cup milk
  • 3 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • pepper
  • 1 pinch ground nutmeg
  • 3 tablespoons butter

Recipe

  • 1 1. bring a large pot of salted water to a rapid boil.
  • 2 2. in a large bowl, whisk together the eggs and milk. add the flour, baking powder, salt, pepper and nutmeg and stir vigorously until the mixture forms a smooth elastic batter.
  • 3 3. using a rubber spatula carefully push the batter through the holes of a colander or the large holes of a box grater into the boiling water. the spätzle will cook quickly; you’ll know when it’s done as the noodles will float! scoop out with a slotted spoon and set aside. continue in this manner until all of the batter has been cooked.
  • 4 4. heat the butter in a large non-stick frying pan until it begins to foam. add the spätzle in small batches, frying until golden brown.

Tomato And Crispy Bacon Fettuccini

  • 300 g dry fettuccine
  • 225 g lean bacon, without rind, cut into 4cm pieces
  • 150 g green beans
  • 1 yellow pepper, deseeded and cut into 1 cm slices
  • 400 g pasta sauce
  • 1 tablespoon dried basil
  • 20 g parmesan cheese, grated

Recipe

  • 1 cook fettuccini in a large saucepan of boiling water until dente and drain well.
  • 2 heat a dash of oil in a frying pan and quickly cook the bacon pieces until crisp and golden, set aside.
  • 3 add the beans and pepper to the pan and cook until tender.
  • 4 pour in the pasta sauce, add the bacon and cook, stirring until hot. toss through the well drained fettuccini with basil leaves.
  • 5 serve with grated parmesan cheese on the side.

Swordfish With Orzo, Pistachios And Olives

Ingredients

  • Servings: 4
  • 3/4 cup orzo pasta
  • 1/2 cup pitted mixed olive, coarsely chopped (2 ounces)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons unsalted butter
  • 3 tablespoons extra virgin olive oil
  • salt & freshly ground black pepper, to taste
  • crushed red pepper flakes, to taste
  • 4 (5 ounce) skinless swordfish steaks, cut 1 inch thick
  • 1/2 cup coarsely chopped shelled pistachios

Recipe

  • 1 in a saucepan of boiling water, cook the orzo until al dente; drain.
  • 2 return to the saucepan.
  • 3 stir in the olives, lemon juice, butter and 2 tablespoons of the oil; season with salt, pepper, crushed red pepper flakes
  • 4 meanwhile, light a grill or heat a grill pan until very hot.
  • 5 brush the fish with the remaining 1 tablespoon of olive oil and season with salt and pepper.
  • 6 grill over moderately high heat, turning once, until browned and just cooked through, about 7 minutes.
  • 7 stir the pistachios into the orzo and serve with the swordfish.

Whole Wheat Spaghetti With Cauliflower And Feta

Ingredients

  • Servings: 6
  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 head cauliflower, cut into bite-sized florets
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2/3 cup wine
  • 6 ounces uncooked whole wheat spaghetti
  • 1 pint grape tomatoes, cut into halves
  • 1/2 cup coarsely chopped walnuts
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup crumbled feta cheese

Recipe

  • 1 heat oil in skillet. saute onion until tender. add garlic and cook another two minutes. add cauliflower, cook and stir for 5 minutes. season with salt and pepper and add wine.
  • 2 cover and cook for 15 minutes, or until cauliflower is fork tender.
  • 3 cook pasta according to directions on the package. reserve 1/2 cup pasta cooking water.
  • 4 add tomatoes, walnuts, reserved pasta water and red pepper to skillet. cook 2-3 minutes, or until tomatoes begin to soften.
  • 5 toss spaghetti with veggie sauce and top with feta.

Sylvia's Awesome Pasta Salad

Ingredients

  • Servings: 6
  • 2 (12 ounce) packages tri-color spiral pasta or 2 (12 ounce) packages curly pasta
  • 18 -24 ounces girard's italian romano cheese dressing or 18 -24 ounces champagne dressing
  • 2 large chicken breasts, boned, cooked and cubed
  • 1 (8 ounce) jar pimientos, diced
  • 2 (12 ounce) cans large black olives (sliced)
  • 1 (4 ounce) can hearts of palm (sliced)
  • 1 lb cooked baby shrimp
  • 2 tablespoons capers (optional)
  • fresh parsley, chopped

Recipe

  • 1 cook, drain and cool pasta.
  • 2 mix all ingredients in a bowl, after the salad has been mixed for a couple of hours taste and add more salad dressing if you want more.
  • 3 *** if you have someone who's allergic to shrimp leave out or serve the shrimp in a separate dish. thaw shrimp and marinate in salad dressing and serve along side the pasta salad.
