Spanish Meatballs

Ingredients

- 1 1/2 lbs . ground turkey
- 1 teaspoon salt
- 2 onions, finely chopped, divided
- 2 garlic cloves, minced, divided
- 1 tablespoon paprika
- 1 cup roasted red pepper, chopped, divided
- 1/2 cup breadcrumbs
- 2 tablespoons parsley, chopped
- 1 egg
- 1 tablespoon olive oil
- 1 (454 g) can diced tomatoes
- 4 cups tomato juice
- 2 tablespoons granulated sugar
- 1 teaspoon hot sauce
- 1 teaspoon worcestershire sauce
- 2 cups basmati rice
- 6 saffron threads
Recipe
- 1 in a large bowl, combine turkey, salt , half the chopped onions, half the garlic, paprika, 1/2 cup roasted red peppers, breadcrumbs, parsley and egg. mix turkey until well combined and set aside.
- 2 in a large pot on medium, heat oil and sauté remaining onions until transparent. add all remaining ingredients and bring to a simmer.
- 3 with slightly damp hands, form turkey mixture into meatballs, approximately 2 tablespoons in size. gently drop meatballs into simmering sauce until all the turkey mixture is finished. cover pot and let simmer on low for 1 hour or until meatballs ore cooked through.
- 4 to make rice:.
- 5 follow package directions, adding saffron threads to water. try using vegetable or chicken stock instead of water for more savory rice.
