Spanish Meatballs

Ingredients

  • Servings: 6
  • 1 1/2 lbs . ground turkey
  • 1 teaspoon salt
  • 2 onions, finely chopped, divided
  • 2 garlic cloves, minced, divided
  • 1 tablespoon paprika
  • 1 cup roasted red pepper, chopped, divided
  • 1/2 cup breadcrumbs
  • 2 tablespoons parsley, chopped
  • 1 egg
  • 1 tablespoon olive oil
  • 1 (454 g) can diced tomatoes
  • 4 cups tomato juice
  • 2 tablespoons granulated sugar
  • 1 teaspoon hot sauce
  • 1 teaspoon worcestershire sauce
  • 2 cups basmati rice
  • 6 saffron threads

Recipe

  • 1 in a large bowl, combine turkey, salt , half the chopped onions, half the garlic, paprika, 1/2 cup roasted red peppers, breadcrumbs, parsley and egg. mix turkey until well combined and set aside.
  • 2 in a large pot on medium, heat oil and sauté remaining onions until transparent. add all remaining ingredients and bring to a simmer.
  • 3 with slightly damp hands, form turkey mixture into meatballs, approximately 2 tablespoons in size. gently drop meatballs into simmering sauce until all the turkey mixture is finished. cover pot and let simmer on low for 1 hour or until meatballs ore cooked through.
  • 4 to make rice:.
  • 5 follow package directions, adding saffron threads to water. try using vegetable or chicken stock instead of water for more savory rice.
