Tasty Chicken Pasta With Tomato And Peppers

Ingredients
- Servings: 4
- 4 boneless skinless chicken breasts, chopped
- 2 tablespoons olive oil
- 2 garlic cloves, crushed
- 1 small onion, diced
- 1 small red pepper, diced
- 1 small yellow pepper, diced
- 1 small green pepper, diced
- 1 chicken stock cube
- 400 g chopped tomatoes
- 0.5 (400 g) can water (the empty tin 1/2 filled)
- 2 tablespoons tomato puree
- salt
- pepper
- 1 cup frozen peas (or both) or 1 cup sweet corn (or both)
- 2 tablespoons fresh parsley, chopped (optional)
- pasta shells (enough for 4-6)
Recipe
- 1 heat olive oil and soften garlic and onion.
- 2 add peppers for a few minutes then add chicken.
- 3 when chicken is all over add tomatoes, stock cube, puree, water and seasoning.
- 4 cook gently for 15 mins till chicken is cooked through and sauce has thickened.
- 5 at this time cook pasta.
- 6 add peas if used and finally parsley before serving.
- 7 mix together the sauce and pasta.
