Tortellini With Sausage, Tomatoes And Cream

Ingredients

  • Servings: 6
  • 1 (20 ounce) package fresh tortellini
  • 2 tablespoons olive oil
  • 1 lb sweet italian sausage, casings removed and crumbled
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup onion, diced
  • 3 garlic cloves, minced
  • 1 1/2 cups heavy cream
  • 1 (28 ounce) can plum tomatoes, drained and coarsely chopped
  • 1/2 teaspoon salt
  • 3 tablespoons fresh parsley, minced

Recipe

  • 1 bring a large pot of lightly salted water to a boil. cook pasta in boiling water for 6 to 8 minutes, drain.
  • 2 heat oil in large skillet over medium heat. add sausage and pepper flakes. cook until sausage is no longer pink, stirring often, about 8 minutes, drain.
  • 3 add onion and garlic to skillet and cook until onion is tender and sausage is light brown, stirring often, about 7 minutes.
  • 4 stir in cream, tomatoes, salt and parsley. simmer until mixture thickens slightly, about 5 minutes.
  • 5 stir cooked pasta into sauce, and heat through.
