Spaghetti With Leeks, Peas And Pesto

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 6 ounces spaghetti
  • 5 ounces frozen peas
  • 1 tablespoon olive oil
  • 2 large leeks, thinly sliced
  • 1 tablespoon pesto sauce
  • parmesan cheese, grated to serve (optional)

Recipe

  • 1 cook the spaghetti according to pack instructions, adding the peas for the final 2 minutes.
  • 2 meanwhile, heat the oil in a frying pan, add the leeks, then gently cook for about 5 minutes until softened.
  • 3 stir in the pesto and 3 tbs of the pasta cooking water then simmer for a few minutes.
  • 4 drain the pasta and peas, then add to the frying pan, tossing everything together.
  • 5 serve with parmesan, if using.
