Spaghetti With Leeks, Peas And Pesto

Ingredients

- 6 ounces spaghetti
- 5 ounces frozen peas
- 1 tablespoon olive oil
- 2 large leeks, thinly sliced
- 1 tablespoon pesto sauce
- parmesan cheese, grated to serve (optional)
Recipe
- 1 cook the spaghetti according to pack instructions, adding the peas for the final 2 minutes.
- 2 meanwhile, heat the oil in a frying pan, add the leeks, then gently cook for about 5 minutes until softened.
- 3 stir in the pesto and 3 tbs of the pasta cooking water then simmer for a few minutes.
- 4 drain the pasta and peas, then add to the frying pan, tossing everything together.
- 5 serve with parmesan, if using.
