The Three C's Rice Casserole

Ingredients
- Servings: 6
- 3 cups rice, cooked (or brown)
- 2 cups sharp cheddar cheese, grated, divided
- 2 cups carrots, peeled and grated
- 1 cup cashew nuts, unsalted, slightly broken
- 2 extra large eggs, lightly beaten
- 3/4 cup half-and-half
- 1/4 cup onion, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper, fresh grind
Recipe
- 1 preheat oven to 350°f.
- 2 combine all ingredients except 1 cup cheese and cashews.
- 3 butter 2 qt casserole.
- 4 pour combined ingredients into casserole.
- 5 scatter nuts over top, follow with rest of cheese evenly sprinkled over top.
- 6 bake 50-60 minutes. cover lightly wih foil if getting too brown.
