The Three C's Rice Casserole

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 3 cups rice, cooked (or brown)
  • 2 cups sharp cheddar cheese, grated, divided
  • 2 cups carrots, peeled and grated
  • 1 cup cashew nuts, unsalted, slightly broken
  • 2 extra large eggs, lightly beaten
  • 3/4 cup half-and-half
  • 1/4 cup onion, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, fresh grind

Recipe

  • 1 preheat oven to 350°f.
  • 2 combine all ingredients except 1 cup cheese and cashews.
  • 3 butter 2 qt casserole.
  • 4 pour combined ingredients into casserole.
  • 5 scatter nuts over top, follow with rest of cheese evenly sprinkled over top.
  • 6 bake 50-60 minutes. cover lightly wih foil if getting too brown.
  • 7 it's all done -- what are you waiting for!
  • 8 dig in!
