Spanish Rice - Great Alone Or For Stuffing

Ingredients
- Servings: 6
- 1/4 cup butter
- 1/3 cup onion, chopped
- 1/3 cup green pepper, diced
- 1/4 cup celery, diced
- 1/2 lb mushroom, sliced
- 19 ounces tomatoes, 1 can
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups cooked rice
Recipe
- 1 heat butter in frying pan and fry onion, green pepper, celery and mushrooms until tender.
- 2 add tomatoes, salt and pepper.
- 3 simmer slowly for 10 minutes.
- 4 stir in 2 cups cooked rice.
- 5 turn into buttered 2 quart casserole.
- 6 bake in 375 degree oven for 25 minutes, or until bubbling.
- 7 more tomatoes or tomato juice may be added if desired.
