Spanish Rice - Great Alone Or For Stuffing

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1/4 cup butter
  • 1/3 cup onion, chopped
  • 1/3 cup green pepper, diced
  • 1/4 cup celery, diced
  • 1/2 lb mushroom, sliced
  • 19 ounces tomatoes, 1 can
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups cooked rice

Recipe

  • 1 heat butter in frying pan and fry onion, green pepper, celery and mushrooms until tender.
  • 2 add tomatoes, salt and pepper.
  • 3 simmer slowly for 10 minutes.
  • 4 stir in 2 cups cooked rice.
  • 5 turn into buttered 2 quart casserole.
  • 6 bake in 375 degree oven for 25 minutes, or until bubbling.
  • 7 more tomatoes or tomato juice may be added if desired.
