Spinach And Artichoke Pasta With Lemon

Ingredients
- 2 cups whole wheat pasta, cooked
- 2 tablespoons goat cheese
- 1 (15 ounce) can artichokes
- 2 garlic cloves, minced
- 1/2 lemon, juice of
- 1/2 lemon zest
- 2 cups spinach
- 1 teaspoon basil
- 1 teaspoon oregano
- salt & pepper
Recipe
- 1 cook pasta according to package, reserve 2 tablespoons water.
- 2 heat garlic in skillet over low for 2 minutes. add artichoke and spinach until wilted.
- 3 add pasta, lemon juice and zest, spices, cheese, and pasta water. cook until cheese melts and sauce thickens.
