Spinach And Artichoke Pasta With Lemon

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • 2 cups whole wheat pasta, cooked
  • 2 tablespoons goat cheese
  • 1 (15 ounce) can artichokes
  • 2 garlic cloves, minced
  • 1/2 lemon, juice of
  • 1/2 lemon zest
  • 2 cups spinach
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • salt & pepper

Recipe

  • 1 cook pasta according to package, reserve 2 tablespoons water.
  • 2 heat garlic in skillet over low for 2 minutes. add artichoke and spinach until wilted.
  • 3 add pasta, lemon juice and zest, spices, cheese, and pasta water. cook until cheese melts and sauce thickens.
