Tarragon Fettuccine

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 (16 ounce) package dry fettuccine pasta
  • 10 slices bacon, chopped
  • 1 yellow onion, chopped (i prefer vidalia)
  • 1 1/2 teaspoons minced garlic
  • 1 (28 ounce) can diced tomatoes
  • 1 tablespoon dried tarragon
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1 tablespoon extra virgin olive oil

Recipe

  • 1 fry bacon in a large skillet until crispy- remove bacon& set aside.
  • 2 keep bacon grease in pan.
  • 3 add chopped onion and garlic to pan- sautee until onion is transparent.
  • 4 drain 1/2 liquid out of can of tomatoes and add to the pan.
  • 5 add tarragon,red pepper,salt,and olive oil.
  • 6 simmer over medium heat for 15 minutes.
  • 7 cook fettucine in salted boiling water until al dente and then drain.
  • 8 add to tomato mixture until coated.
  • 9 garnish with fresh parsley and parmesan cheese.
