Tuesday's Tomato & Tuna Pasta

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 4 anchovy fillets, rinsed (optional)
  • 3 cloves garlic, minced
  • 1 (28 ounce) can diced tomatoes or 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt (only use if you omitted anchovies) (optional)
  • 1 (6 ounce) can tuna in water, drained
  • ground black pepper
  • 3/4 lb pasta

Recipe

  • 1 prepare pasta in boiling water and put aside.
  • 2 heat oil in skillet over medium heat.
  • 3 saute anchovies and garlic quickly, breaking up the anchovies.
  • 4 add tomatoes, oregano, basil, (and salt, if using).
  • 5 stir often until tomatoes are cooked down, about 15 minutes.
  • 6 stir tuna into tomato sauce, break up with a fork.
  • 7 season with pepper to taste.
  • 8 toss over hot pasta.
