Spaghetti With Quick Tomato Sauce

Ingredients

- 6 -8 medium plum tomatoes, quartered
- 1 small shallot, peeled and quartered
- 1/4 cup fresh basil leaf
- 1/4 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon sugar
- 6 ounces spaghetti
- 1 tablespoon olive oil
- 2 -3 tablespoons grated parmesan cheese
Recipe
- 1 in food processor, puree tomatoes, shallot and basil until smooth.
- 2 transfer puree to skillet. add thyme, salt, pepper and sugar. bring to a boil over medium heat, stirring occasionally, 12-15 minutes to blend flavor.
- 3 meanwhile, cook pasta, 8-10 minutes. drain and toss with olive oil. pour sauce over pasta. sprinkle cheese on top.
