Spanakorizo

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 onion, peeled, diced
  • 3 bunches spinach, washed 3 times
  • 2 tablespoons olive oil
  • 1 1/2 cups rice
  • 1 tablespoon tomato paste
  • 3 cups water, boiling
  • 1 chicken stock cube
  • salt & pepper

Recipe

  • 1 chop spinach roughly.
  • 2 heat oil and saute onion for 10 minutes add rice and spinach and tomato paste. saute 5 minutes.
  • 3 add water and stock cube and seasoning, mix well.
  • 4 bring to boil and turn down heat and cook for 20mins or until rice is soft.
  • 5 serve.
