Ingredients

- 1 onion, peeled, diced
- 3 bunches spinach, washed 3 times
- 2 tablespoons olive oil
- 1 1/2 cups rice
- 1 tablespoon tomato paste
- 3 cups water, boiling
- 1 chicken stock cube
- salt & pepper
Recipe
- 1 chop spinach roughly.
- 2 heat oil and saute onion for 10 minutes add rice and spinach and tomato paste. saute 5 minutes.
- 3 add water and stock cube and seasoning, mix well.
- 4 bring to boil and turn down heat and cook for 20mins or until rice is soft.
- 5 serve.
