The Supreme Meatball

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 1/2 lbs combination lean ground veal or 1 1/2 lbs ground lean lamb
  • 1/3 cup oat bran
  • 1 large lemon, rind of, grated
  • 2 eggs, lightly beaten
  • 2/3 cup freshly grated romano cheese
  • 1/3 cup minced fresh parsley
  • 1/2 cup minced onion
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon ground allspice
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 2 tablespoons olive oil
  • tomato sauce (recipe to follow)
  • 1 lb spaghetti or 1 lb linguine or 1 lb fettuccine

Recipe

  • 1 in a large bowl, lightly mix together the ground meat, oat bran, lemon rind, eggs, cheese, parsley, onion, garlic, salt, pepper, allspice, oregano and basil.
  • 2 refrigerate several hours or overnight.
