Wild Rice Pilaf With Cashews

Ingredients
- Servings: 4
- 1/4 cup butter
- 1/3 cup chopped onion
- 1 cup long grain and wild rice blend
- 2 cups chicken broth
- 1/2 teaspoon salt
- 1/2 cup chopped cashews
Recipe
- 1 melt butter in a saucepan and cook onion until tender, add rice and stir.
- 2 cover with chicken broth and sprinkle with salt. cover and simmer for 30 - 40 minutes or until all liquid is absorbed.
- 3 sprinkle with cashews just before serving.
