Sicilian Lentil Pasta Sauce

Ingredients

  • Servings: 8
  • 2 teaspoons olive oil
  • 1 cup onion, chopped
  • 2 cups mushrooms, fresh,chopped
  • 1 zucchini
  • 3 cloves garlic, minced
  • 1 cup dry lentils
  • 3 cups water
  • 16 ounces tomato sauce
  • 6 ounces tomato paste
  • 1 1/2 teaspoons sugar
  • 1/2 cup water

Recipe

  • 1 in a large pot, heat oil over medium heat.
  • 2 add onions, mushrooms, zucchini and garlic.
  • 3 cook while stirring over medium heat for about 5 minutes.
  • 4 add lentils[i like the orange ones] and 3 cups water to the vegetables.
  • 5 turn up the heat and bring to a boil, stirring occasionally.
  • 6 reduce heat to low, cover, and cook 45 to 60 minutes.
  • 7 stir in tomato sauce, tomato paste, sugar, and 1/2 cup water.
  • 8 bring to a boil.
  • 9 reduce heat, cover, and simmer for 20 minutes.
  • 10 if necessary, add more water to keep the sauce from sticking.
  • 11 be careful not to dilute; the sauce should be quite thick.
