Sicilian Lentil Pasta Sauce

Ingredients

- 2 teaspoons olive oil
- 1 cup onion, chopped
- 2 cups mushrooms, fresh,chopped
- 1 zucchini
- 3 cloves garlic, minced
- 1 cup dry lentils
- 3 cups water
- 16 ounces tomato sauce
- 6 ounces tomato paste
- 1 1/2 teaspoons sugar
- 1/2 cup water
Recipe
- 1 in a large pot, heat oil over medium heat.
- 2 add onions, mushrooms, zucchini and garlic.
- 3 cook while stirring over medium heat for about 5 minutes.
- 4 add lentils[i like the orange ones] and 3 cups water to the vegetables.
- 5 turn up the heat and bring to a boil, stirring occasionally.
- 6 reduce heat to low, cover, and cook 45 to 60 minutes.
- 7 stir in tomato sauce, tomato paste, sugar, and 1/2 cup water.
- 8 bring to a boil.
- 9 reduce heat, cover, and simmer for 20 minutes.
- 10 if necessary, add more water to keep the sauce from sticking.
- 11 be careful not to dilute; the sauce should be quite thick.
