Tuna Rice Salad

Ingredients
- Servings: 4
- 2 cups cooked rice
- 2 (6 ounce) cans tuna, drained
- 2 eggs, hard boiled and chopped
- 1 cup grated carrot
- 6 -10 green onions, sliced
- 1/4 cup chopped sweet pickle
- 1/4 teaspoon pepper
- 3/4 cup mayonnaise (i use miracle whip light)
- 1/4 cup vinegar
- 2 tablespoons vegetable oil
- 2 tablespoons olive oil
Recipe
- 1 chill cooked rice.
- 2 combine with remaining ingredients, pour over rice, and mix well.
- 3 chill for at least 2 hours.
