Tuna Rice Salad

Total Time: 2 hrs 30 mins Preparation Time: 30 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 2 cups cooked rice
  • 2 (6 ounce) cans tuna, drained
  • 2 eggs, hard boiled and chopped
  • 1 cup grated carrot
  • 6 -10 green onions, sliced
  • 1/4 cup chopped sweet pickle
  • 1/4 teaspoon pepper
  • 3/4 cup mayonnaise (i use miracle whip light)
  • 1/4 cup vinegar
  • 2 tablespoons vegetable oil
  • 2 tablespoons olive oil

Recipe

  • 1 chill cooked rice.
  • 2 combine with remaining ingredients, pour over rice, and mix well.
  • 3 chill for at least 2 hours.
