Sweet Potato Mochi

Ingredients
- 1 lb mochiko sweet rice flour
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 1 1/4 cups brown sugar
- 1 (13 1/2 ounce) can coconut milk
- 1 1/4 cups water
- 2 cups sweet potatoes, cooked and diced
- 1 tablespoon black sesame seed
- toasted soy flour (kinako)
Recipe
- 1 preheat electric oven to 350°f
- 2 grease a 13 x 9 x 2-inch baking pan.
- 3 in a large bowl, sift mochiko, baking soda, and salt; add brown sugar and mix well.
- 4 add coconut milk and water; mix well.
- 5 fold in sweet potatoes; pour into prepared pan.
- 6 sprinkle with sesame seed.
- 7 bake for 1 hour.
- 8 cool, cut into 2 x 1-inch pieces.
- 9 coat each piece with kinako (yellow soy bean powder).
