Sweet Potato Mochi

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • 1 lb mochiko sweet rice flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 1/4 cups brown sugar
  • 1 (13 1/2 ounce) can coconut milk
  • 1 1/4 cups water
  • 2 cups sweet potatoes, cooked and diced
  • 1 tablespoon black sesame seed
  • toasted soy flour (kinako)

Recipe

  • 1 preheat electric oven to 350°f
  • 2 grease a 13 x 9 x 2-inch baking pan.
  • 3 in a large bowl, sift mochiko, baking soda, and salt; add brown sugar and mix well.
  • 4 add coconut milk and water; mix well.
  • 5 fold in sweet potatoes; pour into prepared pan.
  • 6 sprinkle with sesame seed.
  • 7 bake for 1 hour.
  • 8 cool, cut into 2 x 1-inch pieces.
  • 9 coat each piece with kinako (yellow soy bean powder).
