Tuna Pasta Fritters With Salsa

Ingredients

  • Servings: 4
  • 1/2 cup small shell pasta, shapes
  • 425 g tuna in water, drained
  • 1 medium zucchini, grated and drained
  • 1 cup flour
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup chopped chives
  • 2 large mint leaves, finely chopped
  • 2 tablespoons olive oil
  • 2 ripe tomatoes, finely chopped
  • 1 tablespoon red onion, finely sliced and chopped
  • 1 tablespoon olive oil
  • 2 teaspoons wine vinegar
  • 1 tablespoon mint leaf, sliced for decoration

Recipe

  • 1 cook pasta in a saucepan of boiling water for 10 minutes, or according to instructions on packet. drain and rinse pasta under cold water.
  • 2 combine pasta with the tuna, zucchini, flour, eggs, milk chives and mint leaves.
  • 3 mix well and season to taste.
  • 4 heat oil in a pre-heated frying pan and drop in tablespoons of mixture. cook both sides for 3-4 minutes or until golden.
  • 5 remove to a paper towel lined plate and keep warm.
  • 6 combine tomato salsa ingredients and serve over patties.
