Tuna Pasta Fritters With Salsa

Ingredients

- 1/2 cup small shell pasta, shapes
- 425 g tuna in water, drained
- 1 medium zucchini, grated and drained
- 1 cup flour
- 2 eggs
- 1/2 cup milk
- 1/4 cup chopped chives
- 2 large mint leaves, finely chopped
- 2 tablespoons olive oil
- 2 ripe tomatoes, finely chopped
- 1 tablespoon red onion, finely sliced and chopped
- 1 tablespoon olive oil
- 2 teaspoons wine vinegar
- 1 tablespoon mint leaf, sliced for decoration
Recipe
- 1 cook pasta in a saucepan of boiling water for 10 minutes, or according to instructions on packet. drain and rinse pasta under cold water.
- 2 combine pasta with the tuna, zucchini, flour, eggs, milk chives and mint leaves.
- 3 mix well and season to taste.
- 4 heat oil in a pre-heated frying pan and drop in tablespoons of mixture. cook both sides for 3-4 minutes or until golden.
- 5 remove to a paper towel lined plate and keep warm.
- 6 combine tomato salsa ingredients and serve over patties.
