Sweet Chilli And Chicken Sauce For Pasta

Ingredients
- Servings: 4
- 1 onion, diced
- 2 cloves garlic, crushed
- 2 tablespoons oil
- 400 g chicken breasts, diced bite size
- 1/4 cup red capsicum
- 1/4 cup green capsicum
- 1/2 cup sweet chili sauce, thai style is good
- 1/2 cup dry wine
- 1 cup cream
- 1 teaspoon chicken stock powder
- 2 tablespoons chopped parsley
Recipe
- 1 heat the oil in a pan over medium heat, add the onion and garlic and cook until softened.
- 2 add the chicken and cook until the chicken has all turned , add the capsicums and cook a couple of minutes more, stirring.
- 3 add all the remaining ingredients except the parsley, then cook about 5 minutes more, until thickened a little.
- 4 serve over your favourite pasta (or rice) sprinkled with the parsley.
