Ww Pasta Skillet Dinner

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 1 1/2 cups soy crumbles (the sausage type)
  • 1 cup mushroom, sliced
  • 1 onion, chopped
  • 1 (18 1/2 ounce) can fat free vegetable soup (progresso makes a 0 point vegetable soup)
  • 3/4 cup bow tie pasta
  • 2 cups spinach
  • 1/2 cup reduced-fat mozzarella cheese, shredded

Recipe

  • 1 in a skillet over medium high heat, cook the soy protein crumbles, mushrooms and onion for 5 minutes or until vegetables are tender.
  • 2 stir in soup. cover and heat to boiling.
  • 3 stir in pasta; reduce heat to medium low; cover and simmer for 10 minutes.
  • 4 stir in spinach; and cook uncovered for another 5 minutes, stirring occasionally or until spinach is hot and begins to wilt.
  • 5 sprinkle with cheese.
