Ingredients

- 1 1/2 cups soy crumbles (the sausage type)
- 1 cup mushroom, sliced
- 1 onion, chopped
- 1 (18 1/2 ounce) can fat free vegetable soup (progresso makes a 0 point vegetable soup)
- 3/4 cup bow tie pasta
- 2 cups spinach
- 1/2 cup reduced-fat mozzarella cheese, shredded
Recipe
- 1 in a skillet over medium high heat, cook the soy protein crumbles, mushrooms and onion for 5 minutes or until vegetables are tender.
- 2 stir in soup. cover and heat to boiling.
- 3 stir in pasta; reduce heat to medium low; cover and simmer for 10 minutes.
- 4 stir in spinach; and cook uncovered for another 5 minutes, stirring occasionally or until spinach is hot and begins to wilt.
- 5 sprinkle with cheese.
