Ingredients

- 2 ounces finely chopped onions
- 1/2 cup chicken bouillon (fat free is available)
- 1/4 cup tomato puree
- 1/2 garlic clove, minced
- 1 medium tomato, chopped
- 1/4 medium green pepper, diced
- 6 ounces cooked shrimp
- 1/2 cup cooked rice
- 2 teaspoons chopped fresh parsley
- salt and pepper
Recipe
- 1 heat a non-stick pan on medium, add the onion and garlic, brown lightly.
- 2 add bouillon and blend in tomato puree.
- 3 add the tomato and green pepper.
- 4 simmer for about 5 minutes until the green pepper is done.
- 5 add the shrimp, rice and parsley to the mixture.
- 6 salt and pepper mixture to taste.
- 7 serve when heated through.
