Wonderful Bread Salad

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 3 tomatoes, diced (i do a larger dice here)
  • 1/2 cucumbers, seedless, diced with skin on or 1/2 english cucumber
  • 3 -4 garlic cloves, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley (good) (optional)
  • 1/3 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • salt
  • pepper
  • 1/2 cup fresh mozzarella cheese, diced (or more)
  • 5 cups bread, diced (dense, hearty bread like sourdough)

Recipe

  • 1 combine tomatoes, cucumber, garlic, and herbs in a large bowl.
  • 2 whisk together oil and vinegar, add salt and pepper to taste.
  • 3 pour the oil/vinegar mixture over the veggies and let them sit at room temperature for about 15 minutes.
  • 4 stir them well and add mozzarella and bread.
  • 5 refrigerate for at least 30 minutes before serving.
