Wonderful Bread Salad

Ingredients
- Servings: 8
- 3 tomatoes, diced (i do a larger dice here)
- 1/2 cucumbers, seedless, diced with skin on or 1/2 english cucumber
- 3 -4 garlic cloves, minced
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley (good) (optional)
- 1/3 cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- salt
- pepper
- 1/2 cup fresh mozzarella cheese, diced (or more)
- 5 cups bread, diced (dense, hearty bread like sourdough)
Recipe
- 1 combine tomatoes, cucumber, garlic, and herbs in a large bowl.
- 2 whisk together oil and vinegar, add salt and pepper to taste.
- 3 pour the oil/vinegar mixture over the veggies and let them sit at room temperature for about 15 minutes.
- 4 stir them well and add mozzarella and bread.
- 5 refrigerate for at least 30 minutes before serving.
