Spanish Rice

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 2 teaspoons vegetable oil
  • 1/2 medium onion, chopped
  • 1 garlic clove, minced
  • 1 medium carrot, diced
  • 1 cup long-grain rice
  • 1 3/4 cups chicken stock
  • 1 tablespoon tomato paste
  • 1 teaspoon coarse salt
  • 1/4 teaspoon fresh ground pepper

Recipe

  • 1 heat oil in a heavy pot over a moderate heat. add onion, and cook until is starts to turn translucent. add the garlic and carrot, and cook for about 2 minutes. stir in the rice. add chicken stock, tomato paste, salt, and pepper. bring to the boil, stir once, and reduce the heat. cover and simmer until all the water is absorbed. take off the fire and allow the rice to stand covered for about 5 minutes. serve warm.
