Wild Rice Stuffing

Ingredients

  • Servings: 7
  • 2 (14 1/2 ounce) cans chicken broth
  • 1 1/2 cups water
  • 2/3 cup uncooked wild rice
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 4 medium carrots, sliced
  • 2 celery ribs, chopped
  • 1 medium onion, chopped
  • 2 tablespoons vegetable oil
  • 1/2 lb fresh mushrooms, sliced
  • 1 1/2 cups uncooked long grain rice
  • 1/4 cup minced fresh parsley

Recipe

  • 1 in a large saucepan, bring broth and water to a boil. add the wild rice, salt and thyme. reduce heat; cover and simmer for 30 minutes.
  • 2 meanwhile, in another saucepan, saute carrots, celery and onion in oil until almost tender. add the mushrooms; saute 5 minutes longer. add vegetables and long grain rice to wild rice. cover and cook for 30-35 minutes or until rice is tender. stir in parsley.
