Zucchini-garlic Pasta

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1 (16 ounce) package wagon wheel macaroni
  • 1/2 lb bacon, diced
  • 1 onion, chopped
  • 4 -6 cloves garlic, minced
  • 3 medium zucchini, halved and sliced
  • salt
  • 3 tablespoons lemon juice
  • 1/2 cup grated parmesan cheese

Recipe

  • 1 prepare pasta according to package directions.
  • 2 in a large skillet cook bacon over medium heat until crisp.
  • 3 remove bacon to drain on paper towel lined plate; discard all but 2 tablespoons of drippings.
  • 4 saute onion and garlic in bacon drippings for about 3 minutes or until tender.
  • 5 add zucchini and salt; saute about 6 minutes or until tender.
  • 6 drain pasta and add to zucchini mixture.
  • 7 add lemon juice and bacon; toss well.
  • 8 pour into a serving bowl and sprinkle with parmesan cheese.
