Zucchini-garlic Pasta

Ingredients
- Servings: 6
- 1 (16 ounce) package wagon wheel macaroni
- 1/2 lb bacon, diced
- 1 onion, chopped
- 4 -6 cloves garlic, minced
- 3 medium zucchini, halved and sliced
- salt
- 3 tablespoons lemon juice
- 1/2 cup grated parmesan cheese
Recipe
- 1 prepare pasta according to package directions.
- 2 in a large skillet cook bacon over medium heat until crisp.
- 3 remove bacon to drain on paper towel lined plate; discard all but 2 tablespoons of drippings.
- 4 saute onion and garlic in bacon drippings for about 3 minutes or until tender.
- 5 add zucchini and salt; saute about 6 minutes or until tender.
- 6 drain pasta and add to zucchini mixture.
- 7 add lemon juice and bacon; toss well.
- 8 pour into a serving bowl and sprinkle with parmesan cheese.
