Zucchini With Pasta

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 (12 ounce) package fusilli or 1 (12 ounce) package rotini pasta
  • 3 large zucchini, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 (7 1/4 ounce) cans diced tomatoes with green pepper and onion, undrained
  • 1/3 cup minced fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup freshly shredded parmesan cheese

Recipe

  • 1 cook pasta in boiling water to desired doneness, drain and keep warm.
  • 2 meanwhile, in a large skillet, saute garlic and zucchini until tender.
  • 3 stir in tomatoes, parsley, salt and pepper.
  • 4 bring to a boil, reduce heat and simmer for 5 minutes, stirring often.
  • 5 stir in pasta and cheese.
