Ingredients
- 1 cup chopped fresh mushrooms
- 1/2 cup sliced green onion
- 2 tablespoons olive oil
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon oregano
- 1/4 teaspoon pepper
- 8 cups chicken stock, warmed
- 3/4 cup orzo pasta
- 2 egg yolks, beaten
- 1 cup light cream
- 1/4 cup grated parmesan cheese
- salt and pepper

- 1 cup ground chicken breast
- 2 tablespoons italian parsley, chopped
- 2 egg whites
- 1/2 cup fine breadcrumbs
- 1 tablespoon grated parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 make meat balls by combining all ingredients.
- 2 chill until firm enough to form into balls.
- 3 saute mushrooms and onions in oil until soft.
- 4 sprinkle with lemon juice, salt, pepper and oregano while cooking.
- 5 heat chicken stock to boiling, add mushrooms and onions and orzo.
- 6 boil 3 minutes.
- 7 add chicken balls and boil until balls float to the top, turn off heat and combine yolks, cream and cheese.
- 8 blend well and whisk into hot soup.
- 9 adjust seasoning, to taste.
- 10 whisk until serving temperature and serve garnished with chopped parsley.
