Zuppa Mariata

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • 1 cup chopped fresh mushrooms
  • 1/2 cup sliced green onion
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon oregano
  • 1/4 teaspoon pepper
  • 8 cups chicken stock, warmed
  • 3/4 cup orzo pasta
  • 2 egg yolks, beaten
  • 1 cup light cream
  • 1/4 cup grated parmesan cheese
  • salt and pepper
  • oregano
  • 1 cup ground chicken breast
  • 2 tablespoons italian parsley, chopped
  • 2 egg whites
  • 1/2 cup fine breadcrumbs
  • 1 tablespoon grated parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 make meat balls by combining all ingredients.
  • 2 chill until firm enough to form into balls.
  • 3 saute mushrooms and onions in oil until soft.
  • 4 sprinkle with lemon juice, salt, pepper and oregano while cooking.
  • 5 heat chicken stock to boiling, add mushrooms and onions and orzo.
  • 6 boil 3 minutes.
  • 7 add chicken balls and boil until balls float to the top, turn off heat and combine yolks, cream and cheese.
  • 8 blend well and whisk into hot soup.
  • 9 adjust seasoning, to taste.
  • 10 whisk until serving temperature and serve garnished with chopped parsley.
