Wild Rice-chicken Casserole

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 (6 ounce) package long grain and wild rice blend
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 2 teaspoons butter or 2 teaspoons margarine
  • 1 (10 ounce) can cream of mushroom soup
  • 1/2 cup sour cream
  • 1/3 cup dry wine
  • 1/2 teaspoon curry powder
  • 2 cups cubed, cooked chicken or 2 cups turkey

Recipe

  • 1 prepare rice mix according to package directions.
  • 2 while rice is cooking, cook onion and celery in butter until tender.
  • 3 stir in soup, sour cream, wine, and curry.
  • 4 stir in chicken and cooked rice.
  • 5 turn into a 2 quart casserole or a 12x7x2 inch baking dish.
  • 6 bake, uncovered, in a 350 degree oven for 35 to 40 minutes.
  • 7 stir before serving.
