Ingredients

- 1/2 cup red onion, chopped
- 1/2 cup orange juice
- 1/4 cup fresh lime juice
- 2 tablespoons fresh cilantro, chopped
- 1/4-1/2 teaspoon cayenne pepper
- 1/2 medium red bell pepper, chopped
- 1/2 medium green bell pepper, chopped
- 1 medium mango, diced
- 2 garlic cloves, minced
- 15 ounces black beans, rinsed and drained
- 3 cups cooked brown rice, kept hot
Recipe
- 1 coat a large nonstick skillet with cooking spray.
- 2 add all ingredients except beans and rice. cook, stirring occasionally, until peppers are crisp-tender, about 5 minutes.
- 3 stir in beans. cook until heated through, about 5 minutes. serve over rice.
