Spanish Rice

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 tablespoons bacon grease or 2 tablespoons olive oil
  • 1 cup rice
  • 1 cup mild cilantro salsa
  • 2 cups water
  • 2 chicken bouillon cubes
  • 1 tablespoon cumin
  • salt and pepper
  • 1 garlic cloves, pressed or 1 garlic powder, to taste
  • 1/2 cup frozen peas and carrot (optional)

Recipe

  • 1 lightly brown rice in bacon grease/or olive oil.
  • 2 add salsa, water, and remaining ingredients.
  • 3 bring to a boil over high heat, then reduce heat to low.
  • 4 add frozen peas and carrots if desired.
  • 5 cover and simmer 30 minutes.
  • 6 stir and serve.
