Spinach And Ricotta Pasta Sauce

Ingredients
- Servings: 4
- 1 onion, peeled and chopped
- 2 garlic cloves, minced
- 14 ounces spinach, chopped
- cooking spray
- 1/2 teaspoon ground nutmeg (optional)
- 12 ounces ricotta cheese
- 1/2 cup chicken broth
- 1 pinch salt & freshly ground black pepper
Recipe
- 1 spary a large non stick saucepan with cooking spray and add the onion, garlic and spinach. stir fry for 8-10 minutes.
- 2 add the nutmeg (if using) ricotta and broth.
- 3 cook for a further 4-5 minutes, stirring often.
- 4 remove from the heat and season well.
- 5 serve mixed with cooked pasta of your choice.
