Wild Rice With Pecans And Mushrooms

Ingredients

- 1/2 lb wild rice
- 3 cups water
- 1 1/2 teaspoons salt
- 1 1/2 cups sliced mushrooms
- 1/2 cup butter
- fresh ground black pepper (optional)
- 1/2 cup coarsely broken toasted pecans
- chopped parsley (to garnish)
Recipe
- 1 soak rice overnight in water.
- 2 drain, wash well, and put in a medium saucepan.
- 3 cover with water, add salt, and bring to a boil.
- 4 reduce heat to low, cover, and cook about 1 hour, or until tender; drain if necessary.
- 5 saute mushrooms in butter, add pepper, and pour over rice.
- 6 add pecans, toss, and garnish with parsley before serving.
