Wild Rice With Pecans And Mushrooms

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 1/2 lb wild rice
  • 3 cups water
  • 1 1/2 teaspoons salt
  • 1 1/2 cups sliced mushrooms
  • 1/2 cup butter
  • fresh ground black pepper (optional)
  • 1/2 cup coarsely broken toasted pecans
  • chopped parsley (to garnish)

Recipe

  • 1 soak rice overnight in water.
  • 2 drain, wash well, and put in a medium saucepan.
  • 3 cover with water, add salt, and bring to a boil.
  • 4 reduce heat to low, cover, and cook about 1 hour, or until tender; drain if necessary.
  • 5 saute mushrooms in butter, add pepper, and pour over rice.
  • 6 add pecans, toss, and garnish with parsley before serving.
