- 1 1/3 cups bulgur wheat
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 6 tablespoons chopped parsley
- 4 scallions, finely chopped
- 1 cucumber, finely chopped
- 2 tablespoons chopped mint
- 1 large tomato, finely chopped
Recipe
- 1 soak the bulgur wheat in 13/4 cups boiling water for 15 minutes.
- 2 combine with remianing ingredients.
- 3 cover and chill.
