Tomato And Parmesan Rice With Basil

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 1/2 cups water
  • 1 cup long grain rice
  • 1/2 teaspoon kosher salt
  • 1 (14 1/2 ounce) can diced tomatoes, drained
  • 1/2 cup parmesan cheese, grated
  • 1/4 cup fresh basil, chopped

Recipe

  • 1 in a medium saucepan, combine water, rice, and kosher salt, and bring to a boil.
  • 2 stir once, reduce heat to low, cover and simmer until water is absorbed and the rice is tender, 18 minutes.
  • 3 before removing the rice from heat, sprinkle it with tomaotes and parmesan.
  • 4 remove from heat and let stand, covered, for 5 minutes. fluff with fork.
