Tomato And Mozzarella Pasta

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1 lb grape tomatoes, halved
  • 4 ounces bocconcini, halved (small mozzarella balls)
  • 1/2 cup basil, torn
  • 1/4 cup red wine vinegar
  • 1 1/2 tablespoons olive oil
  • 1/2 lb rigatoni pasta
  • 1 cup chicken, cooked and shredded

Recipe

  • 1 in a serving bowl mix together first 5 ingredients (tomatoes - oil). let stand 10 minutes.
  • 2 cook pasta according to package directions. drain.
  • 3 add pasta and chicken to the tomato mixture, tossing.
  • 4 season with salt and pepper and top with basil, if desired.
